Semolina pudding with coconut flakes and caramel syrup

Ingredients for 4 servings:

  • 1 liter milk, 1.5% fat
  • 80 g soft wheat semolina
  • 25 g sugar
  • 15 g desiccated coconut
  • 1 tsp caramel syrup

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 20 minutes

Bring the milk to a boil in a saucepan, then add the remaining ingredients and mix well. Simmer on low heat for about 10-15 minutes. Stir every 3-4 minutes to prevent the semolina from burning. A low-calorie alternative: Replace the sugar with liquid sweetener and omit the caramel syrup. The semolina pudding can be turned out; silicone molds are best for this. I like to serve it with strawberries or strawberry-rhubarb compote.
