Bruschetta with grilled peach, goat cheese and balsamic syrup

Ingredients for 12 servings:

  • 2 peaches
  • 1 tbsp sugar
  • 1 ciabatta
  • 150 g goat cheese
  • ½ tbsp honey
  • olive oil
  • pepper, black

Instructions

Working time approx. 40 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 55 minutes

Preheat the oven to 200°C (top/bottom heat). Bring the balsamic vinegar and sugar to a boil in a saucepan and simmer the balsamic-sugar mixture until it forms a thick syrup. Cut the ciabatta into 1-2 cm wide slices. Place them on a baking sheet lined with baking paper and drizzle generously with olive oil. Bake in the oven for five minutes until slightly crispy. Halve the peaches and cut into wedges. Then toss with about 1-2 tablespoons of olive oil. Briefly fry the peach slices on each side. Thinly slice the goat cheese and spread it on the ciabatta. Top with the peach slices and season with honey and a little black pepper. Return to the oven for another 10 minutes. Finally, drizzle with the balsamic syrup or serve it separately.
