Grapefruit-kiwi jam

Ingredients for 1 servings:

  • 500 g pink grapefruit(s), prepared and weighed
  • 250 g kiwi(s), green, prepared, weighed
  • 250 g kiwi(s), golden, prepared, weighed
  • 500 g gelling sugar 2:1
  • 1 shot of rum, optional

Instructions

Working time approx. 45 minutes; Cooking/baking time approx. 3 minutes; Total time approx. 48 minutes

Peel the grapefruit, remove all the white pith, and cut out the segments and chop them into small pieces. Peel the kiwis, halve them, remove the hard white core in the middle of the fruit, and cut the flesh into small pieces. Mix everything in a large saucepan with the preserving sugar. Bring to a boil, stirring constantly, and simmer for about 3 minutes. Test for setting. Remove the pan from the heat. Blend with a hand blender if desired. Add a dash of rum if desired. Ladle the jam into jars while it’s still piping hot. Let the jars stand upside down for about 5 minutes. I don’t blend this jam; we like the little pieces in it. If you like a more tangy jam, you’ll love this one.
