Ingredients for 4 servings:

  • 500 g potatoes, boiled
  • 130 g flour
  • 40 g semolina
  • 150 g bacon or ham
  • 2 eggs
  • salt and pepper
  • e.g. parsley, chopped

Instructions

Working time approx. 45 minutes; Total time approx. 45 minutes

Finely chop the bacon and mix with the parsley and pepper. Form it into small balls. Grate the cooked potatoes (they can be from the day before). Mix with flour, semolina, butter, eggs, and salt to form a dough. Form a log and cut thin slices. Press these apart slightly with the palm of your hand, top each with a bacon ball, and then form them into dumplings. Cook gently in boiling salted water for about 20 minutes.
