Crispy Country Bread

The perfect crispy country bread recipe with a picture and simple step-by-step instructions.

  • 450 g Ruchmehl
  • 50 g Spelled flour type 1050
  • 50 g Natural sourdough, liquid
  • 50 g Warm water
  • 10 g Fresh yeast
  • 1 tsp Salt
  1. Put the types of flour in a bowl. Dissolve yeast in warm water with sourdough. Then knead the water mixture with the flour types and add salt! Let everything go overnight, covered!
  2. The next day, knead everything with a little flour again! Place a cast iron roaster in the oven and preheat the oven to 250 degrees! Shape the dough into a ball and place it in the oven-preheated roaster with baking paper! Cut crosswise! Put the lid on and bake everything for 30 minutes! Then switch back to 220 degrees! Then bake for another 20-30 minutes without a lid!
  3. Take the roast out of the oven and take out the bread. Let cool down!
