Crispy Country Bread

- 450 g Ruchmehl
- 50 g Spelled flour type 1050
- 50 g Natural sourdough, liquid
- 50 g Warm water
- 10 g Fresh yeast
- 1 tsp Salt
- Put the types of flour in a bowl. Dissolve yeast in warm water with sourdough. Then knead the water mixture with the flour types and add salt! Let everything go overnight, covered!
- The next day, knead everything with a little flour again! Place a cast iron roaster in the oven and preheat the oven to 250 degrees! Shape the dough into a ball and place it in the oven-preheated roaster with baking paper! Cut crosswise! Put the lid on and bake everything for 30 minutes! Then switch back to 220 degrees! Then bake for another 20-30 minutes without a lid!
- Take the roast out of the oven and take out the bread. Let cool down!
