Microwave cheesecake

Ingredients for 1 servings:

  • 200 g low-fat curd cheese
  • 1 m.-sized egg(s)
  • 1 tbsp flour or coconut flour, heaped tbsp
  • 2 tbsp, levelled sugar or agave syrup
  • 1 pinch of baking powder
  • some flavoring or 1 tsp orange liqueur or lemon zest

Working time approx. 5 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 10 minutes

quick and tasty, low carb, AZTD suitable

Mix the quark, egg, and sugar. This is easily done with a spoon; you don’t need a mixer. Combine the flour and baking powder and stir into the mixture. Then add the flavoring and season to taste. Pour the mixture into a slightly larger cereal bowl and (depending on your microwave) bake it in the microwave for about 4-5 minutes at full power. The cake will rise slightly during baking but will collapse again when you remove it. It won’t have a browned surface, of course, but it will taste delicious and moist. A good alternative for me, since I’m on a low-carb diet and no longer use flour.
