Sauce for Turkey

The perfect sauce for turkey recipe with a picture and simple step-by-step instructions.

  • 1 Pc. Neck of the turkey – is included
  • 2 Pc. Wing tips
  • 1 Pc. Carrot
  • Celery and leek
  • Clove of garlic, onion
  • 0,25 teaspoon Sugar
  • 1 tbsp Tomato paste
  • 0,125 l White wine
  • 500 ml Chicken broth
  • 2 Stems Fresh thyme
  • Salt, pepper, poultry seasoning
  • 1 tbsp Oil
  1. Wash the neck of the turkey and cut it into pieces. Cut off the outer parts of the wings and wash them too. Peel the soup greens and cut into small cubes. Peel and finely dice the onion and garlic.
  2. Heat the oil in a saucepan and sear the meat, then add the onion and garlic cubes and fry briefly. Add the sugar and let it melt, then add the tomato paste and roast. Pour in the white wine and let it almost boil down, then pour in the chicken broth and simmer for about 30 minutes. I now add the thyme and the spices and let everything simmer gently for another 15 minutes.
  3. Pour the sauce through a sieve and let it boil down a little, season to taste and, if necessary, add a little seasoning. If the sauce is too thin for you, stir some cornstarch with water and use it to thicken the sauce.
