Apricot curry

Ingredients for 3 servings:

  • 500 g pork, shredded or schnitzel or steak
  • 2 onions
  • 2 tbsp margarine, or 1 tbsp oil
  • 1 tbsp sugar
  • 2 tsp curry
  • ⅛ liter of water
  • ½ cube of meat broth
  • 1 can apricot(s), approx. 210 g

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

Cut the pork or steak into thin strips. Peel the onions and cut them into eighths. Sauté both in margarine or oil until well browned. Add the curry, sprinkle with sugar, and let it caramelize. Add the water and meat stock cubes. Drain the apricots, chop them up, and add them as well. Add a little apricot juice and heat everything up again briefly. Serve with basmati rice.
