Crêpes with chanterelles

Ingredients for 4 servings:

  • 200 g flour
  • 2 eggs
  • 400 ml milk
  • 1 pinch of salt
  • 1 pinch(s) of sugar
  • 200 g chanterelles, cleaned
  • 1 onion(s), finely chopped
  • 100 g smoked bacon, diced
  • 1 bunch chives, fresh
  • salt and pepper
  • olive oil

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 40 minutes

Mix all the ingredients for the crêpes together in a bowl, adding a little more milk if necessary to achieve the desired thickness. The batter should be nice and runny so that it spreads quickly and easily in the pan. Add a little oil to a pan and then fry thin crêpes in batches. Dice the onions and fry in a little oil until translucent. Then add the bacon and brown lightly. Finally, add the chanterelles and fry briefly and vigorously. Slice the chives. When the chanterelles are the desired firmness, remove the pan from the heat. Add the chives and season with salt and pepper. Place the crêpes on a plate, place the chanterelles on one half and fold them up. They go wonderfully with a light salad.
