Lamb loin stuffed with grappa raisins and goat's cheese

Ingredients for 2 servings:

  • 2 lamb loins (200 g each)
  • 1 tbsp, heaped raisins
  • 4 cl grappa
  • 150 g goat’s cheese
  • 125 g bacon, sliced
  • 1 tbsp coconut oil

Instructions

Working time approx. 30 minutes; Rest time approx. 12 hours; Cooking/baking time approx. 30 minutes; Total time approx. 13 hours

80 degree method

Mix the raisins and grappa and let it soak overnight. Preheat the oven to 80 degrees Celsius using a shallow dish. Score the lamb loin, but do not cut all the way through. Spread the cream cheese on the lamb loin and top with the raisins. Fold the lamb loin closed and wrap it in bacon. Heat the oil in a pan and fry the lamb loin. Then place it in the oven and cook for about 25 minutes (medium).
