Salmon skewers in honey-mustard-lemon-dill marinade

Ingredients for 4 servings:

  • 800 g salmon fillet(s), without skin
  • 1 bunch dill, fresh
  • 1 lemon(s), organic
  • 5 tbsp honey
  • 1 tbsp mustard, medium hot
  • 6 tbsp extra virgin olive oil
  • salt and pepper

Instructions

Working time approx. 20 minutes; Rest time approx. 2 hours; Cooking/baking time approx. 12 minutes; Total time approx. 2 hours 32 minutes

Cut the salmon fillet into cubes approximately 2.5-3 cm thick. Grate the lemon zest into a bowl (only the yellow part, not the white, which is bitter!). Squeeze the lemon juice and mix with the zest. Add the honey and mix well. Then stir in the olive oil, a spoonful at a time. Season with salt and pepper. Finely chop the dill and stir in. The amounts of lemon and honey may vary. Please taste and adjust if necessary. Add the salmon pieces to the marinade, mix well, and marinate, covered, for at least 2 hours. After about 2 hours, remove the salmon pieces, thread them onto shish kebab skewers, and fry or grill for about 2-3 minutes on each side.
