Ingredients for 1 servings:

  • 250 g blueberries
  • 50 g sugar
  • 75 g butter
  • 100 g cream
  • 20 g cornstarch
  • some lemon juice
  • possibly water

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

First, wash and puree the blueberries. Then, place them in a saucepan with the sugar and simmer over medium heat for about 5 minutes. Stir in the butter and let it melt, then add the cream. Meanwhile, mix the cornstarch with the lemon juice (adding a little more water if necessary). Stir in the dissolved cornstarch, add it to the blueberry mixture, and simmer until the curd slowly thickens. Pour the blueberry curd into a boiled jar; once cooled, refrigerate.
