Ingredients for 2 servings:
- 300 g chicken breast fillet(s)
- 250 ml sauce (barbecue sauce)
- 180 g flour
- 125 ml water, warm
- 100 g cheese (Gouda), grated
- 2 tbsp coriander greens, chopped
- 2 tbsp oil
- 1 tbsp, leveled cornmeal
- 4 tsp olive oil
- 2 tsp sugar
- 2 onions, red
- 1 tsp salt
- ½ cube of yeast, fresh
- Oil for the tray
- Flour for the work surface

Pizza dough – chicken – barbecue – red onions
It’s best to prepare the dough and chicken the day before. This makes enough for 2 small or 1 large pizza. Otherwise, double the amount of dough. Dissolve the yeast in warm water and set aside for 5-10 minutes. Mix the flour, sugar, and salt in a bowl. Make a well in the center and pour in the dissolved yeast and 3 teaspoons of olive oil. Stir everything together with a wooden spoon. Rub your hands with a little olive oil and knead the dough well for 5 minutes. Alternatively, you can use a food processor. The dough should still be a little sticky. Lightly rub the dough with olive oil, place it in a bowl, and cover it airtight with cling film. Set the dough aside for 2 hours, preferably somewhere warm, such as near a heater. After 2 hours, knead the dough again and re-seal it in the refrigerator overnight. Cut the chicken into pieces and fry them in a pan with cooking oil. Then season with salt and pepper. Let it cool slightly, then add 6 tablespoons of barbecue sauce. It’s best to refrigerate it overnight. Lightly oil the pizza pan and spread the cornmeal evenly. Roll out the dough on a floured surface. It should be very elastic. Place the dough on the pizza pan and spread the remaining barbecue sauce on top. Spread the chicken evenly on top. Dice the mozzarella and slice the onions. Spread both on the pizza. Sprinkle grated Gouda cheese on top. Bake at 260°C for 8-10 minutes, until the pizza begins to turn golden brown. Sprinkle the freshly chopped cilantro over the pizza and serve.
