Chicken breast baked with onion peaches

Ingredients for 4 servings:

  • 4 chicken breast fillets
  • 10 peach(s) (peach halves), fresh or from the can
  • 2 onions, red
  • 2 tbsp clarified butter
  • 200 ml hollandaise sauce
  • 150 g cheese (Gouda), grated
  • some salt and pepper

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 40 minutes

hearty fruity, very quick and easy

Preheat the oven to 180°C. Wash and trim the chicken breast fillets, and season generously with salt and pepper. Melt the clarified butter in a pan and sear the fillets on both sides for about 2 minutes. Then remove and place in a baking dish. Halve the onion and slice into thin rings, and slice the peaches into wedges. Add the onions to the previously used clarified butter and sauté until browned. Then add the peach slices and sauté briefly. Add the hollandaise sauce, mix well, and season with salt and pepper to taste. Pour the contents of the pan over the chicken breast fillets and sprinkle with the grated Gouda cheese. Finish cooking in the hot oven for 20 minutes. Serve with steamed broccoli with brown butter, mashed potatoes, or a green salad.
