Healthy yogurt pancakes with mealworms

Ingredients for 2 servings:

  • 150 g spelt flour (original spelt flour)
  • 200 g natural yogurt
  • 100 ml milk
  • 50 g mealworms, dried
  • 1 packet of baking powder
  • 3 eggs
  • 1 tsp honey
  • 1 tsp cinnamon powder
  • some oil

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

Whisk the milk and eggs until frothy and add the natural yogurt. Combine the flour and baking powder and stir into the milk, egg, and yogurt mixture along with the mealworms. Finally, fold in the honey and cinnamon powder. Heat the oil in a pan over medium heat. Add a small ladleful of batter and fry until golden brown on both sides.
