Rice and chicken salad à la Mama

Ingredients for 4 servings:

  • 4 handfuls of rice
  • 1 small can of mushrooms
  • 1 can of tangerine(s)
  • 1 can of corn
  • 200 g turkey or chicken, cooked or fried
  • 1 small onion(s)
  • 3 gherkins
  • 2 tsp mustard, sweet
  • 2 tbsp balsamic vinegar
  • n. B. Pfeffer
  • 200 g mayonnaise
  • ½ cup yogurt
  • possibly salt

Instructions

Working time approx. 35 minutes; Rest time approx. 4 hours; Total time approx. 4 hours 35 minutes

Cook the rice and let it cool. Meanwhile, peel the onion and drain the mushrooms. Slice the mushrooms. Cut the meat, mandarin oranges, onion, and gherkins into chunks. Place in a bowl with the corn and the cooled rice. Add the yogurt, mayonnaise, mustard, and vinegar and mix everything together. Season to taste with pepper and a little salt, if desired. Refrigerate the salad for a few hours before serving, but preferably overnight.
