Chicken breast in thyme sauce

Ingredients for 4 servings:

  • 4 chicken breast fillets
  • 40 g flour
  • 40 g butter or margarine
  • 200 g tomatoes
  • 1 tsp paprika powder
  • Thyme
  • 150 ml cream
  • 1 tbsp cognac

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Wash, peel, and dice the tomatoes. Wash the chicken and pat dry. Season with salt and pepper and coat in flour. Heat butter in a pan and fry the chicken until golden brown on both sides. Add the diced tomatoes and season with paprika and thyme. Simmer in a covered pan over low heat for about 10 minutes. Add the cream and cognac and simmer for about 3 minutes with the pan uncovered. Season to taste. This goes well with green tagliatelle and mixed salad. Alternatively, you can also use chicken thighs.
