Ingredients for 1 servings:
- 130 g butter
- 100 g sugar
- 1 packet of vanilla sugar
- 2 eggs
- 250 g flour
- ½ pack of baking powder
- 1 pinch(s) salt
- 1 organic lemon(s), zest and juice
- 100 g confectionery (Merci)
- 1 packet of powdered sugar
- little water
- Lemon zest (see above)
Instructions
Working time approx. 35 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 1 hour 25 minutes
Cream the butter until fluffy, then add the sugar, vanilla sugar, and eggs and mix in. Then add the lemon juice from the whole lemon (you can use just half a lemon if you don’t want the lemon flavor to be as intense) and mix in the flour, salt, and baking powder. Finely chop the Mercí sweets and mix them in. Pour the batter into 14 muffin cups. Bake in a preheated oven at 180°C (convection oven) for 20 minutes. Meanwhile, mix the powdered sugar with a little water and add the lemon zest (or lemon juice if you only used half a lemon). Spread the lemon glaze over the cooled muffins. The Merci sweets give the muffins a slightly different taste with every bite, as each piece has a different flavor. Tip: Since I made the muffins for Valentine’s Day, I colored the glaze pink.
