Muffins with chocolate bar, buttermilk and oil

Ingredients for 1 servings:

  • 5 chocolate bars, e.g. Twix bars (70 g each)
  • 250 g flour
  • 2 ½ tsp baking powder
  • ½ tsp baking soda
  • 1 egg(s)
  • 125 g sugar
  • 1 packet of vanilla sugar
  • 80 ml vegetable oil
  • 300 g buttermilk

Instructions

Working time approx. 30 minutes; Rest time approx. 5 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 55 minutes

for a 12-cup muffin tray

Preheat the oven to 180°C (top/bottom heat). Place paper baking cups in a 12-hole muffin tin. Set aside some Twix for decoration and cut the rest into small pieces. Mix the flour with the baking powder and baking soda in a bowl. Whisk the egg in a mixing bowl. Add the sugar, vanilla sugar, oil and buttermilk and stir gently. Add the flour mixture and stir until a smooth batter forms. Fold the Twix pieces into the batter. Pour the batter into the baking cups. Bake in the preheated oven on the middle rack for about 20 minutes (test with a skewer). Remove the muffins and let them cool in the tin for another 5 minutes. Decorate the muffins with the remaining cut Twix pieces.
