Grape-kiwi-coconut jam

Ingredients for 1 servings:

  • 500 g green, seedless grapes
  • 400 g kiwi(s), peeled, chopped
  • 100 g desiccated coconut
  • 150 ml white wine
  • 500 g gelling sugar (2:1)
  • 1 vanilla pod(s), if desired

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 40 minutes

Wash the grapes and place them in a saucepan with the peeled kiwis. Puree both and simmer for about 5 minutes, stirring frequently. Then add the desiccated coconut and white wine, then stir in the gelling sugar. Boil everything together for about 5 minutes until bubbling. If desired, you can add a vanilla pod to the boil. Remove the vanilla pod and fill the hot jam into twist-off jars. Turn the jars upside down for 10 minutes, then turn them upside down again and let cool. Tastes perfect with fresh waffles or ice cream, or traditionally served on bread rolls.
