Ingredients for 4 servings:

  • 1 kg red cabbage
  • 3 m.-sized apples, sour
  • lard
  • 1 m.-sized onion(s)
  • some cloves
  • 3 juniper berries
  • Sugar
  • 2 tbsp vinegar
  • 125 ml water or white or red wine
  • 1 tbsp jelly (blackcurrant jelly) or 2 tbsp cranberry compote (to taste)
  • 1 bay leaf
  • 1 stalk(s) cinnamon

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Remove the outer leaves from the red cabbage, quarter the cabbage, remove the stalk, and wash the cabbage. Finely chop the red cabbage. Peel, core, and finely chop the apples. Peel and finely chop the onion. Heat the lard and sauté the cabbage, apple pieces, and onion. Add the water or wine, vinegar, jelly, salt, sugar, cinnamon stick, cloves, bay leaf, and juniper berries, and sauté the cabbage for about 2 hours until tender. Season to taste with salt, sugar, and vinegar. Tip: Place the cloves, juniper berries, and bay leaf in a tea strainer and cook with the cabbage to avoid biting into cloves or juniper berries.
