Zucchini and Pepper Salsa

Ingredients for 1 servings:

  • 1 kg zucchini
  • 500 g bell pepper(s)
  • 1 ½ liters of ketchup
  • 300 ml olive oil
  • 500 g onion(s)
  • 2 tsp Tabasco
  • 1 tsp chili powder
  • 2 tsp Worcestershire sauce
  • 2 cloves garlic
  • 1 tsp spice mix (liquid smoke)
  • 1 tsp cumin
  • 1 tbsp sugar
  • 3 tsp salt

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 2 hours; Total time approx. 2 hours 30 minutes

Cut all ingredients into small pieces and mix them together. Simmer for about 1.5-2 hours, then pour into jars while still hot. You can, of course, replace the ketchup with pureed tomatoes and add a little vinegar and sugar. This salsa is very versatile.
