Mexican-style stuffed zucchini

Ingredients for 4 servings:

  • 4 zucchini
  • 500 g minced meat, mixed
  • 1 pack of feta cheese, diced
  • 1 onion(s)
  • 2 garlic cloves
  • 1 bell pepper(s), red
  • oregano
  • salt and pepper
  • 2 tbsp olive oil
  • chili powder if needed

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Wash the zucchini, halve it, and scoop out the seeds with a small spoon. Peel and finely chop the onion and garlic. Trim and dice the bell pepper. Heat the oil in a pan and sauté the onion and garlic until translucent. Then add the ground beef and fry until crumbly. Season with salt, pepper, and chili powder, if desired (I only serve the chili powder so everyone can decide how spicy they want it). Mix with the diced bell peppers and diced feta cheese and stuff the zucchini. Place them side by side in a baking dish. Bake in a preheated oven at 180°C for about 20 minutes. Serve with rice and tomato sauce or just ketchup.
