Chicken in apple and red wine sauce

Ingredients for 4 servings:

  • 1 chicken
  • 2 apples
  • 250 ml sweet red wine
  • 3 bay leaves
  • salt and pepper
  • Garlic
  • 1 cup broth

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Preheat oven to 180°C. Wash the chicken inside and out, then pat dry. Season with salt, pepper, and garlic inside and out. Cut 1/2 apple into small pieces and mix in some of the seasoning. Stuff the chicken with this mixture. Push the bay leaves in between. Place the chicken in a roasting pan/casserole dish. Cut the remaining 1 1/2 apples into wedges and arrange them around the chicken. Pour the red wine into the dish. Brush the chicken with the stock and cook in the oven for 1 hour. Baste the chicken with stock occasionally to ensure the skin crisps up and doesn’t crack or become too dry. Then drain the stock with the apple slices and puree. If there isn’t enough liquid, dilute with the remaining stock and red wine as desired. Rosemary potatoes or simple croquettes go very well with this dish.
