Baked pork medallions in curry sauce

Ingredients for 4 servings:

  • 8 pork medallions
  • 2 apples
  • 2 bananas
  • 1 cup of sweet cream
  • 4 tsp curry powder
  • 2 tbsp tomato paste
  • salt and pepper, pepper
  • n. B. Cheese (Gouda), grated

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Season the pork medallions with salt and pepper and sear on both sides. Peel the apples, core them, and cut them into thick slices. Peel and halve the bananas. Layer the medallions, apples, and bananas in a baking dish. Whip the cream and season with curry powder, tomato paste, and a little salt. Pour the mixture over the meat and fruit in the baking dish. Sprinkle with the cheese. Bake in a preheated oven at 220°C for about 30 minutes. Serve with rice and a green salad.
