an amazingly simple secret recipe from my trusted pastry chef

Mix the clarified butter, eggs, vanilla sugar, sugar, and a dash of rum well together. Add the apples and mix in. Mix the flour with the baking powder and fold into the mixture. Pour the batter into a greased springform pan. Bake in the preheated oven for approx. 1 hour at Gas Mark 4 (top/bottom heat: 200°C). Test the pan with a skewer or knife for doneness before removing. Caution: Place aluminum foil or a baking sheet under the pan to catch any butter that may run off. Remove the pan from the oven, turn it out onto a wire rack, and use a knife to loosen the crust. The apple pie is best served undecorated as it is.
