Ingredients for 1 servings:

  • 50 g mustard seeds, yellow
  • 5 g salt
  • 25 g sugar (or 30 g honey)
  • 30 g vinegar (wine vinegar 5%)
  • 40 ml water

Instructions

Basic recipe

Grind the mustard seeds a little coarser in a food processor or coffee grinder (while grinding in the food processor, loosen the grounds frequently and ensure they don’t heat above 30°C). Bring the water to a boil briefly, let it cool for 5 minutes, and then pour it over the mustard flour (this will reduce the mustard’s sharpness). Mix the mustard flour and the other ingredients with an electric mixer. Stirring the ingredients should take 4-5 minutes. The longer you stir, the better the mustard will be. Bottle the mustard and let it stand for 3 days. During this time, it will lose its initial sharpness.
