Mediterranean olive sauce

Ingredients for 4 servings:

  • 1 jar black olives without stones
  • 1 jar green olives without stones
  • 2 onions
  • 25 g capers
  • 2 tbsp olive oil
  • 1 pack of tomatoes in their own juice
  • rosemary
  • Thyme
  • Pepper, freshly ground
  • 2 garlic cloves
  • Salt

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Drain the olives thoroughly in a colander and slice them. Drain the capers thoroughly in a colander and cut them into small pieces. Peel and dice the onions. Heat the olive oil in a saucepan. Sauté the diced onions and olive slices until lightly browned. Then add the tomatoes in their juices. Bring to a boil briefly, then stir in the capers, herbs, salt, and pepper. Press the garlic and stir in. Then simmer the sauce over low heat for about 8 to 10 minutes.
