- 200 g butter or semi-skimmed margarine
- 75 g sugar
- 40 g Stevia
- 1 pinch of salt
- 1 vanilla pod(s)
- 1 egg(s)
- 250 g spelt flour type 630
- 125 g almond flour
- 5 apples
- 1 tsp cinnamon
- 20 g cranberries
- 30 g walnuts
- some lemon juice
- 70 g marzipan

Mix the marzipan with 1 teaspoon of hot water and set aside in a warm place. Heat the margarine and mix with the salt, sugar, stevia, and vanilla bean seeds until creamy. Add the egg and continue mixing. Now add the spelt and almond flour to the dough and continue kneading by hand until you have a nice, creamy dough. Press 3/4 of the dough into a springform pan and form a nice edge. It can be a bit thicker if you like. Prick the dough a few times with a fork and place the baking pan and the rest of the dough in the refrigerator. Peel the apples and slice or chunk them. The amount of apples can vary depending on their size. Roughly chop the cranberries and walnuts in a blender or use a knife and add them to the apples. Mix everything together with a little lemon juice and cinnamon, if desired. Preheat the oven to 180°C (top/bottom heat). Remove the cake pan from the refrigerator. First, spread the marzipan mixture and then arrange the apples on the dough. Finally, generously scoop out the remaining dough and scatter it over the cake. Bake the cake for approximately 35-40 minutes.
