mulled wine syrup

Ingredients for 1 servings:

  • 500 ml red wine
  • 2 orange(s), juice, approx. 300 ml
  • 1 lemon(s), juice
  • 50 g sugar (citrus sugar), see my recipe
  • 200 g sugar
  • 8 carnations
  • 8 allspice berries
  • 4 cardamom pods
  • 1 cinnamon stick(s)
  • 1 star anise, optional
  • ½ vanilla pod(s)

Instructions

Working time approx. 10 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour 40 minutes

Lightly press the cardamom pods and place them in a saucepan with all the ingredients except the vanilla pod. Bring to a boil. Turn off the heat and let it steep for 30-60 minutes. Pour through a sieve into a clean saucepan. Split the vanilla pod lengthwise, scrape out the seeds, and add the vanilla and pod to the mulled wine. Bring to a boil and reduce over medium heat for 30 minutes. Do not boil too much, otherwise the syrup will not dissolve well in drinks. Pour into hot, rinsed, clean bottles with the vanilla pod and seal immediately. Delicious over ice or in drinks. Pour 1-2 tablespoons into a glass and top up with sparkling wine or Prosecco.
