Ingredients for 1 servings:

  • 560 g flour (rye flour)
  • 500 g cane sugar
  • 100 g honey, warmed
  • 110 g butter, softened
  • 4 eggs
  • ½ lemon(s), grated peel
  • 2 tsp gingerbread spice
  • 1 tsp baking soda
  • 200 g powdered sugar
  • lemon juice
  • possibly protein
  • Jam, to assemble

First, knead all of the ingredients thoroughly in a large bowl using a mixer whisk, then knead onto a floured board to form a nice dough. Divide into 3 pieces and then roll out to a thickness of around 4-5mm, flouring the board regularly. Cut out stars in 4 different sizes (for 1 tree you need 2 very large, 2 slightly smaller, 2 small and 1 very small star) and bake in a preheated oven at 160°C (convection oven) for around 10-12 minutes. Once cooled, assemble the stars (always offset) with jam (2 very large + 2 slightly smaller + 2 small + 1 very small) and sprinkle thickly with icing sugar or drizzle with icing sugar. Glaze: Mix approx. 200g of icing sugar with lemon juice and a little water (it should be thick) and pour over the trees, adding extra dusting to the tips. You can also beat 1 egg white stiff and add icing sugar until the desired thickness is reached. My stars have diameters of 4.5cm – 4cm – 3cm – 2.5 cm.
