Apple and cheese schnitzel with light curry sauce

Ingredients for 4 servings:

  • 4 small pork or turkey schnitzels (approx. 150g each)
  • 1 m.-large apple, sour (Elstar)
  • 1 tbsp clarified butter
  • some salt and pepper
  • 70 g walnuts, roughly chopped
  • 4 slice(s) cheese, medium-aged Gouda
  • 2 small onions, finely chopped
  • 2 tbsp butter
  • 1 tsp curry powder
  • 1 tsp cornstarch
  • 150 g whipped cream, liquid
  • 150 ml vegetable stock, instant

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

Rinse and pat dry the meat. Wash the apple and core it, then cut it into horizontal slices. Preheat oven to 180°C (top/bottom heat). Heat clarified butter in a pan and fry the schnitzels for about 3 minutes on each side. Remove from the pan and place in a baking dish. Sauté the apple slices in the frying fat for a few minutes, place them on the schnitzels, and stuff the apple slices with the walnuts. Place the cheese on top and bake in the hot oven for about 8 minutes. Melt the butter in the frying fat and sauté the onion pieces until golden brown. Sprinkle in the cornstarch and curry powder, mix, and pour in the cream and stock. Simmer over low heat for 3 minutes, stirring occasionally. Season with salt and pepper. Serve the schnitzels with the sauce on plates. Serve with rice or green spelt flour. Tip: It also tastes good with soy schnitzel.
