Satay skewers with peanut sauce

Ingredients for 2 servings:

  • 125 g rice (long grain rice)
  • 2 turkey schnitzels (approx. 150g each)
  • some soy sauce
  • 1 bunch of spring onions
  • 1 small can/mandarin orange(s)
  • 2 tbsp peanut butter
  • oil
  • 100 ml chicken broth
  • 150 ml orange juice
  • some salt and pepper

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 35 minutes

Cook rice according to package instructions. Meanwhile, cut the turkey cutlets into three long strips each. Thread the strips onto shish kebab skewers in a wavy pattern and drizzle with soy sauce. Slice the spring onions into rings. Drain the mandarin oranges. Season the skewers with salt and pepper. Fry in hot oil for about 6 minutes. Heat oil in another pan and fry the spring onions. Add the rice and fry for 3 minutes. Season with salt and pepper, and stir in the mandarin oranges. Remove the skewers from the pan and keep warm. Deglaze the pan with the stock and juices. Stir in the peanut butter and bring to a boil briefly. Serve everything together.
