Ingredients for 1 servings:

  • 250 g spelt flour
  • 50 g hazelnuts or sweet almonds, finely ground
  • 1 tsp, heaped baking powder or cream of tartar
  • 150 g apple
  • 150 ml orange juice, freshly squeezed
  • 5 prunes
  • 3 drops butter-vanilla flavoring
  • 1 pinch of salt
  • 1 egg(s)

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Mix together the flour, baking powder, salt, and hazelnuts or almonds. Peel and finely grate the apple, drizzle with freshly squeezed orange juice to prevent the apple from browning. Finely chop the dried plums and separate them well. Mix everything together with the egg, using a wooden spoon rather than a food processor. Once you have a sticky dough, use two spoons to place small heaps on baking paper and form flat cookies (3 cm in diameter). Preheat the oven to 180°C and bake the cookies for about 20 minutes; they should be golden brown and not too soft.
