Coconut and Mirabelle Shake Cake

Ingredients for 1 servings:

  • 1 can of mirabelle plums
  • 125 g butter
  • 150 g flour
  • 80 g sugar
  • 1 pinch of salt
  • 120 g desiccated coconut
  • 250 g flour
  • 100 g desiccated coconut
  • 1 packet of baking powder
  • 175 g sugar
  • 1 packet of vanilla sugar
  • 5 eggs
  • 200 g butter, melted
  • 150 ml juice (mirabelle plum juice) from the can
  • 1 pinch of salt
  • Grease for the tray

Instructions

Working time approx. 35 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour 5 minutes

Sheet cake with coconut sprinkles

Drain the mirabelle plums well, reserving the juice. Cut into small pieces. Preheat the oven to 200°C. Combine all the ingredients for the crumble topping in a bowl and knead until crumbly. For the dough, combine the flour and baking powder, sift into a sealable bowl, and mix with the sugar, vanilla sugar, and salt. Add the eggs, butter, and mirabelle plum juice. Close the bowl tightly and shake vigorously. Mix everything well again. Spread the batter onto a greased baking sheet. Arrange the mirabelle plum pieces on top. Sprinkle with the coconut crumble. Bake the cake for about 30 minutes and let it cool thoroughly.
