Tomato – Vegetable – Sauce

Ingredients for 4 servings:

  • 2 bell peppers, red, diced
  • 1 m.-large zucchini, diced
  • 1 small eggplant(s), diced
  • 2 m.-large onion(s), diced
  • 1 garlic clove(s), crushed
  • 1 can tomato(s) (Pizza tomatoes)
  • Tomato paste
  • Salt
  • pepper
  • Vegetable broth, instant
  • 1 tbsp fresh basil, chopped
  • 1 tbsp oregano, fresh, chopped
  • ½ tbsp Thyme, fresh, chopped
  • 3 tbsp olive oil
  • 200 ml water

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

for pasta

Sauté the onion and garlic in hot olive oil until translucent. Then add the bell peppers, zucchini, and eggplant. Gently fry the vegetables for about 10 minutes. Now add the pizza tomatoes, water, and chopped herbs. Season with vegetable stock, salt, and pepper to taste. Cover and simmer for another 10 minutes. Add the tomato paste and thicken the sauce to the desired consistency. This sauce goes well with any type of pasta.
