Ingredients for 1 servings:
- 200 g hazelnuts, whole
- 3 eggs
- 100 g butter or margarine
- 400 g sugar
- 1 tbsp gingerbread spice
- 200 g almond(s), ground
- 500 g flour
- 1 tsp baking powder
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
Whisk the eggs, softened butter, and sugar until fluffy. Add the gingerbread spice, ground almonds, and flour. Finally, add the whole hazelnuts. Form the dough into long rolls, approximately 2 cm wide. Preheat oven to 180°C (350°F), fan oven to 160°C (220°F). Place the rolls on a baking sheet lined with baking paper and bake for 18-20 minutes. Remove the rolls from the oven and cut them into 1 cm-thick slices with a sharp knife. Place the dough slices flat next to each other on the baking sheet and continue baking at the same temperature until the cookies are hard and dry.
