Parmesan Chicken

Ingredients for 4 servings:

  • 4 chicken thighs, approx. 1100 g
  • ¾ cup Miracle Whip
  • 1 cup of cornflakes, approx. 200-250 g
  • ½ cup Parmesan, approx. 80-100 g
  • salt and pepper

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Chicken thighs in a cornflake-parmesan breading

Wash the thighs and pat dry. Place the cornflakes in a freezer bag and crush them, using a rolling pin if necessary. Mix the crushed cornflakes with Parmesan cheese and season with salt and pepper. Brush the thighs with Miracle Whip and coat them in the cornflake coating. Place the breaded thighs in a baking dish and bake for 1 hour at 175°C. If the coating gets too brown, cover with aluminum foil. We serve this with homemade mashed potatoes and a seasonal vegetable. Tip: You can use either grated or freshly grated potatoes. Freshly grated potatoes melt the cheese, making it more flavorful. Variation: Cornflakes can be substituted for chips.
