Ingredients for 4 servings:
- 500 g broccoli, finely chopped
- 1 piece(s) leek, finely chopped
- 1 tbsp butter
- 500 ml beef broth, maybe a little more or less
- 2 slice(s) ham, cooked, cut into thin strips
- 1 slice(s) ham, cooked, cut into thin strips for decoration
- 200 g sour cream
- some salt
- some sugar
- some nutmeg, grated
- some pepper, white
- 1 tsp brandy or a little more (to taste)
Instructions
Working time approx. 15 minutes; Total time approx. 15 minutes
Lightly brown the broccoli and leek in the butter. Pour in about 250 ml of stock and simmer for 20 minutes. Then blend everything with a hand blender. Stir in the sour cream and add as much stock as you like (depending on how thick you want the soup). Season with salt, sugar, pepper, and nutmeg, and add the brandy. Heat again. DO NOT BOIL!! Stir in the 2 slices of finely diced cooked ham and season to taste. Serve the soup on plates or in soup bowls, garnished with some of the remaining cooked ham strips.
