Ingredients for 3 servings:
- 1 onion(s)
- 1 clove(s) garlic
- 2 can/n tomatoes (400 g drained weight each), peeled
- 4 bratwurst, fresh
- 1 bunch of basil
- olive oil
- Salt
- black pepper
Instructions
Working time approx. 25 minutes; Total time approx. 25 minutes
Peel and finely chop the onion. Heat a little olive oil and sauté the diced onion. Then press in the garlic clove. Add the tomatoes and their juice to the pot and mash them with a fork or masher. Bring to a boil and simmer with the lid on over low heat for about 10 minutes. In the meantime, make small dumplings from the sausage filling and then cook them in the soup for about 8 minutes. Wash the basil and shake or pat dry. Pluck the leaves from the stems and cut into small strips. Add the basil strips to the pot and season the soup with salt and pepper. You can also use dried basil from a shaker if you don’t have or don’t like fresh basil. This goes very well with garlic or herb baguette, or fresh white bread with garlic butter.
