Mushroom and spring onion soup

Ingredients for 2 servings:

  • 200 g mushrooms
  • 3 spring onions
  • 50 g bacon, smoked, diced
  • 1 tbsp butter
  • ⅛ liter white wine
  • ⅛ liter of water
  • 200 ml cream
  • pepper
  • Paprika powder, hot

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Clean the fresh mushrooms and slice them thinly. Clean the spring onions and slice them thinly. In a pan, fry the bacon in butter, add the mushrooms and spring onions. Sauté for about 10 minutes. Pour in the water, white wine, and cream. Season to taste with pepper and paprika. Serve hot.
