Ingredients for 1 servings:
- 100 g flaxseed, crushed
- 100 g almond(s), ground
- 5 tbsp wholemeal spelt flour
- 4 tbsp wheat bran
- 1 tsp salt
- 1 packet of baking powder
- 7 protein
- 1 tbsp honey
- 300 g low-fat curd cheese
- 40 g almond(s), chopped
- 30 g sunflower seeds
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 55 minutes; Total time approx. 1 hour 10 minutes
Preheat the oven to 170 degrees Celsius (350 degrees Fahrenheit). Line a small loaf pan with baking paper. Mix the ingredients and knead into a smooth dough. Pour the dough into the KitchenAid and knead for about 3 to 4 minutes on speed 2 using the flat beater or dough hook. If using a regular mixer, knead for about 5 minutes on medium speed. Pour the dough into the baking pan and sprinkle with oats or sunflower seeds, if desired. Bake for about 50 to 60 minutes. Do the skewer test. Let the bread cool in the pan for 10 to 15 minutes. Carefully lift it out and let it cool completely.
