Leek soup with minced meat

Ingredients for 10 servings:

  • 5 stalk(s) leeks
  • 600 g minced meat
  • 4 bowls of processed cheese
  • 4 cups of cream
  • 3 liters of water
  • 7 cubes of meat broth
  • salt and pepper
  • Paprika powder

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Clean and slice the leek. Make a broth from the water and stock cube, and let the leek slices simmer for 10 minutes. Meanwhile, brown the minced meat in a pan with a little oil and season generously with salt, pepper, and paprika. Remove the leek from the broth and puree with a hand blender. Return it to the broth. Add the minced meat, cream, and cream cheese and simmer on low heat for about 25 minutes. Season to taste. Tip: The soup tastes best when prepared the day before.
