Refined tomato and pepper sauce

Ingredients for 4 servings:

  • 3 tbsp olive oil
  • 1 m.-sized onion(s)
  • 1 clove(s) garlic
  • ½ large bell pepper(s), red
  • 6 tbsp tomato ketchup
  • 1 tbsp tomato paste
  • 125 ml tomato juice
  • 1 tsp mustard, medium hot
  • 4 drops of Tabasco
  • ½ bunch parsley, flat
  • ½ bunch of chives
  • 1 m.-large gherkin(s)
  • ¼ tsp sweet paprika powder

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 45 minutes

ideal with schnitzel or grilled meat

Heat the olive oil. Peel and dice the garlic and onion. Then sauté in the heated oil. Deseed and remove the white membranes from the bell pepper. Wash the bell pepper, cut into thin strips, and sauté briefly. Now add the tomato ketchup, tomato paste, tomato juice, and mustard. Bring to a boil and simmer for about 10 minutes. Season to taste. Rinse the herbs, pat dry, finely chop, and stir into the sauce. Finely chop the gherkin and stir in.
