Ingredients for 6 servings:

  • 250 g flour, type 550
  • 20 g yeast
  • ½ tsp sugar
  • 150 ml water, lukewarm
  • ½ tsp salt
  • 10 g butter
  • 1 liter of water
  • 1 tsp baking soda
  • ½ tbsp salt, coarse grain

Instructions

Working time approx. 30 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 30 minutes

Dissolve the yeast and sugar in lukewarm water. Place the flour in a bowl and add the water. Now add the salt and butter and knead all the ingredients into a dough. Roll the dough onto a floured surface into a thin, approximately 40 cm long roll, with each end getting thinner. Shape these rolls into pretzels, cover with a cloth, and let them rise for about 10 minutes. Bring 1 liter of water with the baking soda to a boil, then reduce the heat to medium. Add each pretzel, one at a time, for about 30 seconds. Then remove with a slotted spoon and let them drain. Cool the pretzels for about 30 minutes (in the refrigerator), then place them on a prepared baking sheet. Bake in a preheated oven at 225°C (top/bottom heat) on the middle rack for about 20-25 minutes. Then brush briskly with cold water and sprinkle with coarse salt.
