Spicy minced meat sauce à la Annlaise

Ingredients for 4 servings:

  • 1 bunch lovage
  • 1 bunch of basil
  • 1 bunch of oregano
  • 500 g minced meat, mixed, half beef, half veal
  • 300 g onion(s)
  • 4 garlic cloves
  • 3 Pepper, red
  • 1 small leek
  • 1 m.-sized carrot(s)
  • 150 g celeriac
  • Salt and pepper, white
  • 4 tbsp oil
  • 100 g butter
  • 40 g flour

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 1 hour 30 minutes; Total time approx. 2 hours

without added tomatoes

Brown the minced meat in a pan with the oil. Add the finely diced chopped garlic, chili peppers, basil, oregano, leek, carrots, celery, and lovage, along with salt and a little pepper. Cover and simmer for 1 hour at low heat. Add 1/2 liter of water and simmer gently for another 30 minutes. Mix melted butter with a little flour (beurre manie) and use it to thicken the meat sauce until smooth. Season with salt, if desired. Variation: Add 100 ml of cream to refine the sauce.
