Salmon with pepper and herb crust

Ingredients for 2 servings:

  • 400 g salmon
  • ¾ pot basil
  • ¾ bunch parsley
  • 15 black peppercorns
  • 15 red peppercorns
  • 2 tsp, heaped fleur de sel
  • 2 tsp, heaped oregano, dried
  • 2 tsp, heaped sage, dried
  • 1 tbsp butter
  • 75 g Parmesan
  • 1 clove(s) garlic

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 40 minutes

Rinse the salmon and pat dry with kitchen paper, then place it skin-on in a buttered baking dish. Crush the pepper and fleur de sel in a mortar, finely chop all the fresh herbs and garlic, and grate the Parmesan cheese. Mix everything together with the softened butter and spread it over the salmon, pressing it down with a spoon or your hand if necessary. Place the baking dish in the oven preheated to 180°C (fan oven) and bake the salmon for 25 minutes.
