Salmon – baked

Ingredients for 4 servings:

  • 4 salmon fillets
  • 100 g herb butter
  • 150 g cheese (Emmental), grated
  • oil
  • salt and pepper
  • lemon juice

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

When things need to go quickly

Wash the salmon fillets and pat dry. Season with salt and pepper, and drizzle with a little lemon juice. Meanwhile, heat the oil in a pan. When it’s hot, quickly sear the fillets on both sides. Grease an ovenproof dish with a little herb butter and place the salmon fillets side by side. Sprinkle the remaining herb butter on top and sprinkle the grated cheese over the fillets. Place in a preheated oven at approximately 200°C and bake until the cheese has melted (just a few minutes). If you prefer, let the cheese brown slightly. We serve it with homemade mashed potatoes (the mashed potatoes take considerably longer to prepare than the salmon).
