Red lentils with rice

Ingredients for 2 servings:

  • ½ cup(s) lentils, red, (Turkish store) dried
  • ½ cup(s) rice, loose
  • Salt
  • garlic powder
  • Thyme, shredded
  • Cinnamon
  • Coriander, ground
  • Water, for cooking

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Add the lentils and rice to the pot. Pour hot salted water or broth over it, measuring enough so that the pulses/grains cover half the water volume. Add garlic and chopped onions (if you have them). Add the thyme. Cover and simmer on low heat for about 20 minutes, until the lentils and rice are tender. The rice should only stick slightly, adding more water if necessary. The water should be completely absorbed. Season this colorful rice with coriander and a good amount of Ceylon cinnamon, ideally before all the water has evaporated, so the spices are evenly distributed.
